Best Jiffy based cornbread
This is the best version of Jiffy cornbread. Easy to make, buttery, sweet, light and fluffy. Just perfect!
Prep Time 10 minutes mins
Cook Time 30 minutes mins
Course Side Dish
Cuisine American
- 1/2 C Sour cream
- 3 T Sugar
- 1/2 C Butter 1 stick
- 2 eggs
- 1 box Jiffy cornbread mix
- Non-stick spray For baking dish
- 2 T Honey
Preheat oven to 375F
Add sour cream, butter, sugar and eggs to mixing bowl and stir until fully combine
Add Jiffy mix and thoroughly mix into wet ingredients
Spray baking dish with non-stick spray
Pour cornbread batter into baking dish and smooth with spoon
Drizzle honey over top of cornbread. Do not mix into batter
Place cornbread into oven and back for 30 minutes or until fully baked (about 200 F)

Johnny's Deviled Eggs
You MUST have deviled eggs for holidays, special events, bar mitzvah's and that occasional random Thursday
- 12 large eggs
- 1/2 C mayonnaise
- 1 T Dijon mustard
- 1/4 t Celery Salt
- Paprika (Sweet for those that don't like spice, hot for those with tastebuds)
Boil and peel the eggs
Bring pan of water to a boil
Gently lower eggs into water
Lower the heat to a simmer
Cook the eggs for 13 minutes
Remove the eggs from the pan and immediately place them into a bowl of heavily iced water for a minimum of 5 minutes
Gently tap the eggs on a solid surface, all around the egg.
Peel the shells off, rinse the eggs in cold water and set aside for next step
Prepare the eggs for deviling
Cut each egg in half
Remove egg yolk and place in separate bowl
Place eggs, cut side up, on a platter
Fill the egg halves
There are a couple ways to fill the egg halves. I like to scoop the egg mixture into a zip lock back and then cut a corner out of the bag. You can then use this similar to a piping bag. If you have a piping bag, use that instead.
Gently squeeze mixture into each half, filling the cavity
If you don't want to do the piping method, you can also use a spoon to fill the eggs
Finally, sprinkle paprika over the eggs. I like to use sweet paprika on half and hot paprika on the other. Spicy deviled eggs are awesome!

Roasted garlic and bacon mashed potatoes
Smoky, salty bacon with fresh roasted garlic makes these potatoes a must have side dish for special occasions
- 1 head garlic
- 1 lbs bacon
- 1 T olive oil
- 3 lbs potatoes I like red potatoes for this
- 1 C sour cream
- ⅓ C salted butter
- milk as reqruired
- salt & pepper to taste
Roasting the garlic
Preheat the oven to 425°F.
Slice off the top of the garlic head, drizzle with olive oil and sprinkle with kosher salt
Wrap the garlic head in foil and roast in the oven for 45-55 minutes.
Take garlic out of oven and let sit for about 15 minutes while you prepare the bacon and potatoes
Prepare and cook bacon
Cut bacon strips into 1/2" wide pieces
Cook in pan on medium heat until bacon is browned
When cooked, pour off most of the bacon grease leaving about 1 tablespoon in pan
Add bacon and remaining bacon grease to potatoes
Cook the potatoes
Peel and cube the potatoes, then place them in a large pot of cold salted water.
Boil the potatoes uncovered for 15-20 minutes or until they are fork-tender. Drain well.
Add bacon, sour cream, butter and roasted garlic
Mash the potatoes and roasted garlic using a potato masher until smooth.
Add milk a little bit at a time while mashing to reach the desired consistency.
Season with salt and pepper. Serve hot.

Instant Pot 4 Cheese Macaroni and cheese

Easy to make and very tasty macaroni and cheese. Good side dish for BBQ days
Course Side Dish

- 1 lb Uncooked Elbow Macaroni
- 4 Cups Chicken Broth
- 2 Tablespoons Butter
- 1 Teaspoon Hot Pepper Sauce
- 1 Teaspoon Garlic Powder
- Teaspoon Pepper
- ½ Teaspoon Salt
- 6 ounces Green chilis
- 1 Cup Shredded Cheddar Cheese
- 1 Cup Shredded Swiss Cheese
- ½ Cup Shredded Mozzarella Cheese
- ½ Cup Shredded Parmesan Cheese
- ½ Cup Milk
Add the uncooked macaroni, chicken broth, butter, hot sauce, garlic powder, pepper, and salt to the Instant Pot.
Cook on manual function, high pressure for 5 minutes. Do a quick release.
Add milk and green chilis. Stir thoroughly
Add cheese in three to 4 additions, stirring in between each addition until smooth and creamy.
Add additional milk as needed to make consistency you want

Johnny's Stroganoff

My take on stroganoff. Savory beef, mushrooms and onions in a sour cream based sauce

Course Classic comfort food
Cuisine American
- 2 lbs beef cubed chuck roast, rib roast/steaks, etc.
- 1 lb Sliced mushrooms
- 1 large onion diced
- 1 qt beef stock
- 4 cubes beef bouillon
- 8 oz sour cream
- 1 tsp fresh ground pepper
Brown beef in heavy bottom pan (Dutch oven works great) on high heat
Reduce heat to medium and add mushrooms and onions. Cook until onions are translucent and mushrooms are soft.
Add beef bouillon cubes and stock. Reduce heat and simmer for 1 1/2 hours until beef is tender
Add sour cream and simmer for 15 minutes until sauce slightly thickens
While sour cream is simmering, cook egg noodles according to package instructions
Once noodles are cooked, add to sauce and stir thoroughly
Plate and enjoy

Amazing simple breadsticks

- 1 1/2 C 120 F warm water
- 1 T instant yeast
- 2 T sugar
- 1 t salt
- 2 C bread flour
- 2 C All-purpose flour
In an electric stand mixer with the dough hook, combine water, yeast, sugar, salt and one cup of flour.
Slowly add flour until dough clears the sides of the bowl and makes a ball on hook.
Continue kneading for three minutes. Dough should be soft and slightly sticky.
Let dough rest in the bowl for 10 minutes.
Heat oven to 400 degrees F.
On a lightly floured pastry mat or counter-top, pat the dough into a long rectangle
Cut the dough into 1" wide strips with a pizza cutter.
Place strips on parchment lined cookie sheet.
Lightly coat with olive oil or butter and you choice of seasoning (dried herbs, kosher salt, garlic, etc.)
Let rise for 20 minutes
Place into oven and bake until slightly brown (about 15 minutes).

Johnn's Coleslaw

- 1 small cabbage core removed and shredded
- 1 bunch of green onions chopped
- 1/2 C dried cranberries
- 3/4 C mayonnaise
- 1/4 C apple cider vinegar
- 3 T brown sugar
Mix vegetables and cranberries in large bowl
Mix apple cider vinegar and brown sugar in a small bowl
Microwave vinegar and sugar for 30 seconds to help dissolve sugar
Add vinegar/sugar and mayonnaise to vegetables
Mix well
Refrigerate for 1 hour

Summer Coleslaw

Dressing
- 1/3 C Mayonnaise
- 1 T Apple Cider Vinegar
- 2 t Brown Sugar
- 1 1/2 t salt
- 1 t black pepper
Vegetables
- 3 Carrots
- 1 1/2 bunches green onions
- 1 head red cabbage
In a medium sized bowl, combine dressing ingredients and set aside
Grate the carrots
Slice green onions into 1/4" pieces
Quarter the cabbage and remove the core
Thinly slice cabbage into shreds
Add vegetables to dressing and combine thoroughly

Pecan Sweet Potato Casserole

- 4 Large sweet potatoes cubed
- 1 ⁄2 C white sugar
- 2 eggs beaten
- 1 ⁄2 t salt
- 4 T butter softened
- 1 ⁄2 C milk
- 1 ⁄2 t vanilla extract
- 1 ⁄2 C brown sugar packed
- 1 ⁄3 C all-purpose flour
- 3 T butter softened
- 1 ⁄2 C pecans crushed
Preheat oven to 325 degrees F (165 degrees C). Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.
In a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, milk and vanilla extract. Mix until smooth. Transfer to a 9x13 inch baking dish.
In medium bowl, mix the brown sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
Bake in the preheated oven 30 minutes or until the topping is lightly brown.

Flaky, Buttery Biscuits

Great with a sausage gravy for breakfast and pretty darn good with some butter and honey as well!

- 2 C flour
- 3½ T baking powder
- ½ t salt
- ½ t cream of tartar
- 1 T honey
- 1/2 C cold butter cut into small chunks
- ⅔ C milk
Preheat oven to 450F
Place dry ingredients in a food processor to combine.
Add butter and pulse about 10 times.
Dump into a mixing bowl and add the milk and honey. Stir until it comes together.
Place on a lightly floured surface and knead until not sticky to work the gluten
Roll or pat the dough to about ¾ inch thick.
Cut them with a biscuit cutter, a tin can or a glass. Try not to twist to keep layers separate.
Bake for 10 minutes or until golden brown.
Brush with butter right after they come out of the oven.
Bake 10 minutes or until they are a nice golden brown.
