Tracy's Kahlua

My wife's Kahlua. Everyone says this is way better than the store bought stuff.
- 24 C of strong brewed coffee
- 4 lbs light brown sugar
- 1.75 L Everclear alcohol
- 3/4 C vanilla
Brew 24 cups of strong coffee.
Pour coffee into a large stock pot and bring to a boil.
Add brown sugar and stir constantly for 5 minutes.
Remove stock pot from heat and cool.
Once cool, stir in 1.75 L Everclear.
Use a funnel and pour into bottles
I will often soak a vanilla bean in 3/4 cup Everclear between batches then dump the vanilla bean and Everclear into the stock pot.

Pecan Sweet Potato Casserole

- 4 Large sweet potatoes cubed
- 1 ⁄2 C white sugar
- 2 eggs beaten
- 1 ⁄2 t salt
- 4 T butter softened
- 1 ⁄2 C milk
- 1 ⁄2 t vanilla extract
- 1 ⁄2 C brown sugar packed
- 1 ⁄3 C all-purpose flour
- 3 T butter softened
- 1 ⁄2 C pecans crushed
Preheat oven to 325 degrees F (165 degrees C). Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.
In a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, milk and vanilla extract. Mix until smooth. Transfer to a 9x13 inch baking dish.
In medium bowl, mix the brown sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
Bake in the preheated oven 30 minutes or until the topping is lightly brown.

Flaky, Buttery Biscuits

Great with a sausage gravy for breakfast and pretty darn good with some butter and honey as well!

- 2 C flour
- 3½ T baking powder
- ½ t salt
- ½ t cream of tartar
- 1 T honey
- 1/2 C cold butter cut into small chunks
- ⅔ C milk
Preheat oven to 450F
Place dry ingredients in a food processor to combine.
Add butter and pulse about 10 times.
Dump into a mixing bowl and add the milk and honey. Stir until it comes together.
Place on a lightly floured surface and knead until not sticky to work the gluten
Roll or pat the dough to about ¾ inch thick.
Cut them with a biscuit cutter, a tin can or a glass. Try not to twist to keep layers separate.
Bake for 10 minutes or until golden brown.
Brush with butter right after they come out of the oven.
Bake 10 minutes or until they are a nice golden brown.

Caramel Corn

- 7 quarts plain popped popcorn
- 2 cups dry roasted peanuts optional
- 2 cups brown sugar
- 1/2 cup light corn syrup
- 1 teaspoon salt
- 1 cup margarine
- 1/2 teaspoon baking soda
Place the popped popcorn into two shallow greased baking pans.
Add the peanuts to the popped corn if using. Set aside.
Preheat the oven to 200 degrees F (120 degrees C).
Combine the brown sugar, corn syrup, margarine and salt in a saucepan.
Bring to a boil over medium heat, stirring enough to blend. Once the mixture begins to boil, boil for 5 minutes while stirring constantly.
Remove from the heat, and stir in the baking soda and vanilla. The mixture will be light and foamy.
Immediately pour over the popcorn in the pans, and stir to coat. Don't worry too much at this point about getting all of the corn coated.
Bake for 1 hour, removing the pans, and giving them each a good stir every 15 minutes.
Line the counter top with waxed paper. Dump the corn out onto the waxed paper and separate the pieces.
Allow to cool completely, then store in airtight containers or resealable bags.

Crock Pot Pulled Pork

- 6 tablespoons smoked paprika
- 4 tablespoons salt
- 4 teaspoons black pepper
- 2 teaspoon cayenne pepper
- 2 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 cup honey
- 1 cup red wine vinegar
- 6 tablespoons olive oil
- 2 onions peeled and cut in half
- 7 - 8 pounds pork shoulder cut in half
In a medium size mixing bowl, mix together the first six ingredients (all of the spices) with a fork.
Pour in the honey, vinegar, and olive oil and stir to form a paste.
Place the onion in the bottom of the slow cooker. Top it with the 2 pieces of pork
Pour the honey paste over all sides of the pork pieces.
Turn the slow cooker on to low and cook for 8 to 9 hours or until the meat is tender enough to be easily shredded with a fork.
Serve warm with good split rolls (buns) and your favorite BBQ sauce

Sushi Rice

Use this to create your favorite sushi rolls.

- 2 cups sushi rice
- 2 cups water
- 3 tablespoons rice vinegar
- 4 tablespoons sugar
- 1 tablespoon kosher salt
Rinse rice in cold water, 3 to 4 times. Drain fully
Add rice and water to rice cooker and cook according to manufacturer's instructions.
While rice is cooking, mix remaining ingredients. Stir until sugar dissolves.
Once rice is cooked, pour into large mixing bowl. (The larger, the better. You want enough room to allow the rice to spread out so it can cool.)
Pour rice seasoning (vinegar, sugar and salt concoction) over rice.
Gently mix seasoning liquid into rice trying to evenly coat every rice grain
Set aside and allow to cool to room temperature.

Crockpot Macaroni & Cheese

My attempt at a crockpot (slow cooker) macaroni and cheese

- 16 oz. elbow macaroni
- 4 cups milk
- 12- oz. can evaporated milk
- 8 oz. cream cheese cut into 1-inch pieces
- 3 cups shredded cheddar cheese
- 8 oz cubed ham
- 1 T dry mustard
- 1 T hot sauce Tobasco or Frank's
- 1 t smoked paprika
Spray a large crockpot liberally with cooking spray
Combine the macaroni, evaporated milk, milk, cheeses, ham, mustard and hot sauce in the crockpot.
Sprinkle with paprika.
Cover and cook on low heat until noodles are done (about 2 1/2 hours).
Stir the mixture and serve hot.

Johnny's Pancake Recipe

Course Breakfast

- 2 C Flour
- 3 T Sugar
- 1/4 t Salt
- 2 T Baking Powder
- 1 3/4 C Milk
- 1 T Vanilla
- 2 Eggs beaten slightly
- 1/4 C Butter melted
Combine all dry ingredients
Combine all wet ingredients
Mix wet into dry until well blended
Let batter set for 10 minutes
Heat griddle to 350F
Butter griddle and pour 1/4 C of batter onto griddle
Cook until bubbles break on pancakes and they start to look a little dry
Flip pancakes and cook for 3 minutes more
Serve with butter and your favorite syrup
